Jeff Selvig, Executive Chef of Hotel Pére Marqutte in Peoria, Illinois, is helping to cook up support for the United Saints before Mardi Gras. From February 3 – 10, Chef Jeff will assist the continued rebuilding efforts in New Orleans. This trip will require Selvig to pack both his knives and his tool kit, as he will cook for volunteers and work on houses.
Back in Peoria, Selvig is known for giving the locals a taste of New Orleans favorites like crawfish, softshell crab, and Cajun chicken. He attended Chicago’s Washburne Culinary Institute, and he serves up a mix of American classics alongside Continental cuisine at Carnegie 501.
Chef Selvig will also be recruiting volunteers, supplies, and donations of goods and money. If you are interested in supporting this visit, please consider donating now.

Hi Everyone, having a good time cooking and working with some great people out here in New Orleans. We’ve had some cool and rainy weather the last two days but that doesn’t seem to stop these volunteers from getting the work done! Everyone is really appreciative to have me cooking for them here (one of my favorite things). Finished dinner this evening (Chicken Stir Fry) and going to do some prep for tomorrow (Italian Night). Then up to shower and make menus up for more dinners.

is the 10th wonder of 21st century cuisine!
Somehow even when I yell out Who-Dat! they know I’m not from here. I’m not really sure how but it’s kind of cool still. It’s just another way to greet the people in this entertaining part of the states! I was told today that it’s been a saying from way back in the day and has become a statement that has brought the people together in support for the local football team. Having a good time even while working. During off time I’ve been able to catch many parades. Yes they are plentiful around here and you are always likely to get a gift if you go.
I have several invites to go watch the game tomorrow, it ought to be an experience of a lifetime.

Chef, it sounds like you are really enjoying doing what you do best — giving of yourself to others!!! I hope you get some decent weather before you leave there. We miss you at the Pere!!!!!
Chef,your like a machine… Work all day and cook all night.The United Saints are lucky to have a man like you down there helping them out. Just be careful because if your working even half as hard down there as you do up here,they are liable not to let you leave… We are all proud of you Chef,keep up the good work,but try to get some rest..
